Keep Austin Weird



Hey everyone,
Ok so I've decided that San Angelo isn't awful...and after all it's only less than 4 hours away from Austin!!! Oh Austin, my little drop of blue in a big sea of red.

So we left San Angelo this morning and the first thing we did in Austin was visit Beets Cafe on 5th street - it is an all raw//organic//vegan//gluten free restaurant and it is INCREDIBLE

We had the
ZUCCHINI HUMMUS
Traditional hummus, a creamy blend of zucchini, tahini, sesame seeds, lemon juice, garlic, olive oil, spices, served with crunchy garden vegetable crudités

and for our entrees,

E.L.T.
A delicious sprouted almond sunflower flatbread, spread with a creamy cashew dijonaise, layered with crispy spiced eggplant “bacon”, lettuce, tomato, avocado, and high-vibe sprouts, served with crispy veggie chips.

and

PIZZA RUSTICA
A sprouted sunflower seed crust generously topped with seasoned almond nut cheese, zesty tomato sauce, marinated mushrooms, sweet peppers, crispy onions, olives, fresh tomato, basil, spices, and crystal salt, served with a petite Caesar salad.
they were so incredible. If all food tasted like those I could be Vegan in a heartbeat!!!

We had delicious chocolate cheesecake for dessert. yup, still vegan//raw//organic//gluten free...sooo healthy

and then I'll skip the rest of the day and go straight to dinner...at....The WHOLE FOODS flagship store!!
We just walked around for a bit, taking in everything they have...and then made another lap to pick up dinner. between the pizza//sandwhiches//sushi//juicebar//salad bar// olive bar//bbq//soups//seafood//bakery//indian food//dessert bar//everything else - it was pretty daunting, but we made our way and had some delicious food. I particularly enjoyed my butternut & kale salad <3

for dessert we made our way back to the hotel to enjoy some yerba mate tea and the raw cinnimon rolls we had bought earlier at Beets.

Now relaxing and recharging to eat our way through Austin tomorrow!!

where's my cowboy hat?

Hey there

So after the 11.5 hour drive from Colorado I am now in San Angelo... and what they say is true - there is nothing here! I already miss my Corepower yoga and Coquette Creperie in the Springs!! =(
I called the restaurant we went to beforehand to ask if they had gluten free options and then listened on the phone while everyone tried to figure out what gluten was. Help!
I missed the wardrobe memo too...I showed up in my skinny jeans and stilletos... but i forgot my cowgirl hat and flip flops apparently . haha, i hope Texas is ready for me!

on the positive side - there IS a frozen yogurt bar. there may be hope after all...

Hopefully when I come back after the summer I will be able to live off base and maybe find a roommate...
Guess it will be a little bit of an adventure!

A New Beginning

So it has been a while since I posted, i know. I'm as bad at this as I am at writing in a journal.

Well it has finally arrived and passed - - my graduation and commissioning!!

Here is a little run down of the last couple weeks.
May 9 I had my last ever final, sealed with the traditional fountain jump at USAFA



After my jump, I packed my things [well...a few things..] and headed to Orlando for the weekend to do a Half Iron Man [1.2 mile swim, 56 mile bike, 13.1 mile run]. I finished in 6 hours and 33 minutes. It was a lot of fun and I may or may not already be thinking about when I can do another one.

The next day I headed back to Denver International Airport for the last time in what may be a long time... to prepare for Graduation week!!!
My mom flew in the saturday before graduation and the rest of my family and friends followed on Sunday and Monday. It was so surreal to really be graduating...it still hasn't sunk in completely!!
So commissioning Tuesday May 24th was just lovely. My grandparents took off my cadet shoulder boards and my parents put on my 2nd Lt ones... I even did a little laugh//cry during the oath of office because my nerves got to me!!


Then it was to Biaggi's for a delicious gluten-free dinner and to bed for the big day ahead of me... GRADUATION!!!

It started cold a gloomy...but luckily it cleared up and was gorgeous for the flyover and Thunderbird show!!!
and then it was all over...and now I am a 2nd Lt....weird....

yup, that's me saluting the Chief of Staff of the Air Force after being handed my diploma!!!

And now you are caught up on my life. Keep tuned for 60 days!!!
