Headed Home

Well today was the longest drive yet..from Houston, Tx to Tallahassee, Fl...12 hours!!

Started the morning at the Hotel ICON in downtown Houston


 with a cup of english breakfast tea and a vegan chocolate chip pecan oatmeal muffin that I bought the day before at Fit Foods in San Antonio.

It was a pretty uneventful drive for the first 4 hours until we came to lunch. I simply searched "vegan restaurants" on the map on my phone GPS and found a true GEM of a restaurant in Baton Rouge, LA - Truly Free Bakery & Deli. Everything is Organic//Gluten Free//Dairy Free//Casein Free//Egg Free//lots of vegan options [but also chicken, beef, and bison for the meatier appetites!!] I had an eggplant and avocado panini with steamed veggies. It was sooo fresh and on delicious gluten free bread

They also had delicious sounding wraps that you could have wrapped in cabbage, rice paper, or nori seaweed. Yum.

Even better than the deli food was the BAKERY!!! Since it was the last day of the road trip, I have to admit I indulged...I got a vanilla glazed donut, red velvet cupcake, snickerdoodle cookie, whoopie pie, and baby cinnimon roll. oh wow, I DID indulge!! Everything was soooo good and who knows when I will be able to get another gluten-free donut!! [[PS The ship nationwide!!]]Tomorrow starts the eating better plan, or at least keeping better track of everything, I never feel very good if I have too much sugar- natural or processed.

After we left the bakery we got into my car and nothing happened. it wouldnt start! Luckily a AAA truck pulled right into the parking lot and the man was able to help us out...I had to get a brand new battery! Luckily the wonderful bakery/deli mentioned above was right in front of an Auto Zone so we were able to get the battery, Mr AAA installed it, and we were on our merry way!

Headed Home

ohmygosh I love all things red velvet! I have an awesome recipe for gluten-free donuts, I'll share it with you sometime.
